Norwegian Prawns with Bacon and Avocado

Serves: 4

* 190g Norwegian prawns
* 85g streaky bacon
* 110g avocado
* 60g soured cream
* 15ml lemon juice
* One tsp parsley
* 30g sundried tomatoes
* One tsp basil
* Eight slices wholemeal bread

Preparation time: 5 min.


Oven cook the bacon until crispy. Blend half the avocado with the soured cream and season with the lemon juice and salt and pepper. Chop and add the remaining avocado and sundried tomatoes.

Chop the parsley and basil and add this to the mixture.

Spread the bread with a thick layer of the avocado mixture and then with bacon.

Add a layer of prawns.
Top with another slice of bread spread with the avocado mixture.
